Just Salad to become ‘first US restaurant chain’ to carbon label its menu

Just Salad has committed to labelling all of its menu items with a carbon footprint by September, becoming the first US restaurant chain to do so.

The carbon footprint labels will show the total estimated greenhouse gas (GHG) emissions associated with the production of the ingredients in each menu item.

The company has also pledged to add plant-based cheese options, which have a lower carbon footprint to its menu, by 2022 or earlier.

Sandra Noonan, Chief Sustainability Officer of Just Salad, said: “Our food choices will have a profound effect on the fate of our planet. By carbon labelling our menu, we are embracing climate-smart eating, helping our guests eat for planetary and human health.

"A calorie label simply isn’t enough anymore, we need to know how our food choices affect our wellbeing at a planetary level."

Recent research has shown by halving annual consumption of animal-based products, Americans would reduce diet-related greenhouse gas emissions by 35% and move the US 25% closer to its targets under the Paris Climate Agreement.
